BEEFY MEXICAN LASAGNA 
1 lb. hamburger
1 (16 oz.) can of tomatoes, cut up
1 pkg. of taco seasoning
2 (8 oz.) cans Durkee onions
1 (12 oz.) container of cottage cheese
1 1/2 c. cheddar cheese
2 eggs, slightly beaten
12 (6 inch) flour tortillas
1 tomato, chopped
Shredded lettuce

Brown hamburger and drain. Add tomatoes and seasoning. Simmer uncovered for 5 minutes. Stir in 1/2 of the can of Durkee onions. In a bowl, combine cottage cheese, 1 cup cheddar cheese, and eggs. Mix. Place 3 tortillas on bottom of greased 8 x 12 or 9 x 13 inch baking dish. Overlap 6 tortillas around the sides of the dish. Spoon meat mixture evenly in the dish. Top it with 3 tortillas, then with cheese mixture.

Bake covered at 350 degrees for 45 minutes. Sprinkle with remaining cheese. Place remaining onions in center of casserole; bake uncovered for 5 minutes.

Before serving, arrange tomato and lettuce around the edge of the casserole.
