RUTH'S MEATLOAF 
3 lbs. ground beef
1/3 c. onion, finely chopped
1/3 c. green pepper, coarsely chopped
1/4 c. pimento, coarsely chopped (optional)
4 tsp. salt (or less)
1/4 tsp. pepper
3 1/2 tsp. bottled horseradish
1 1/2 tsp. dry mustard
2 eggs
1/2 c. canned tomatoes (no juice) (or 1 sm. ripe tomato or 1 can undiluted tomato soup)

Get in there with both hands and moosh all of the above together. Shape into the appropriate form for your pan. Make a "ditch" in the top and squirt some ketchup in it and/or cover with slices of raw bacon. Bake at 350 degrees for 1 1/2 hours. Bake covered and add cut up potatoes 30 to 40 minutes before it's done or bake, uncovered.
