MASHED POTATO CAKE 
1 1/2 c. self-rising flour
1 1/2 c. mashed potatoes
1/2 c. milk
3/4 stick butter
1/2 c. chopped scallions
Salt and pepper to taste

Cut the butter into small pieces and mix in the flour and salt and pepper. Mix in the mashed potatoes and the milk to form a soft dough. Press the dough into a 9-inch round shape and place on a lightly buttered tray. Bake for 30 minutes at 425 degrees.
