MASHED POTATO SPICE CAKE | |
2 c. all-purpose flour 5 tsp. unsweetened cocoa 2 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. cloves 1 c. butter 2 c. sugar 1 c. unseasoned mashed potatoes 4 egg yolks, beaten 4 egg whites 1 c. chopped pecans 1 c. raisins 3/4 c. maraschino cherries, drained & coarsely chopped 2 9" lg. cake pans Preheat oven to 350 degrees. Grease and lightly flour two 9 inch layer cake pans. Sift flour with cocoa, baking powder, cinnamon, salt and cloves. In large bowl, at medium speed, beat butter with sugar, potatoes and egg yolks until light and fluffy. At low speed, gradually beat flour mixture about 1 minute. With mixer at high heat, beat egg whites until stiff peaks form. Gently, fold in beaten egg whites into flour mixture, using under and over motion. Stir in nuts, raisins and cherries. Turn into pans dividing equally and evenly. Bake for 50 minutes or until done. Turn onto wire rack and cook completely. Frost. |
