CHRISTMAS SAUSAGE EGGS 
1 1/2 lbs. bulk sausage
9 slices white bread with crust removed
1 stick butter
2 c. shredded Longhorn cheese
8 eggs
2 1/2 c. half and half
1 1/2 tsp. salt
1 1/2 tsp. dry mustard

Cook sausage over low heat until done. Drain and set aside.

Spread butter on bread and cut in cubes. Place cubes in 13x9 inch pyrex dish. Sprinkle sausage on bread and cheese on top of sausage.

Combine remaining ingredients. Beat well and pour over cheese. Chill 8 hours or overnight. Bake at 350 degrees for 40-50 minutes until brown. Serves 8-10. "A tradition for the holidays at the Brinkley home."
