TURKEY MEATLOAF 
This is extremely tasty and very healthy!

1 1/2 lb. ground turkey (I use extra lean)
1 green pepper, chopped
1 small onion, chopped
1 carrot, chopped
1 egg
2 tbsp. prepared mustard (brown or yellow)
1/4 cup ketchup (Hunts)
1 cup uncooked oatmeal
handful of grated Parmesan cheese

Preheat oven to 350°F.

Sauté pepper, onion and carrot in extra virgin olive oil (EVOO) until tender. Set aside and allow to cool a few minutes.

In large bowl mix the ground turkey with all of the other ingredients, including sautéed vegetables. Shape into a loaf and place in a lightly greased baking dish.

Bake at 350°F for 1 hour.
