COTTAGE POTATOES 
10 lg. potatoes, or use 1 lg. bag frozen hashed brown potatoes
1/2 lb. American cheese, diced
1 lg. onion, diced
1 green pepper, diced
2 slices of bread, diced
1 sm. can red pimentos, diced
Corn flakes, crushed
1/2 c. melted butter
Milk to moisten
Salt and pepper to taste

Cook potatoes in jackets and let set to cool. Remove jackets and dice. Add all the diced ingredients and mix well in a large bowl. Place all ingredients in a shallow, oblong 8 x 12 baking dish and cover with crushed corn flakes. Pour melted butter over this. Add enough milk to moisten, and salt and pepper. Bake 1 hour, or until golden brown, in 350 degree oven. Yields 8 servings.
