SUMMER SQUASH CASSEROLE 
2 c. cooked squash
1/2 c. mayonnaise
1/2 c. chopped onion
1 egg, beaten
Salt & pepper to taste
Bread crumbs
1 tsp. sugar
1 c. grated Cheddar cheese
1/2 stick butter

Heat oven to 350 degrees. Cook and mash squash; drain well. Add mayonnaise, onion, egg, sugar, salt and pepper.

Put in a small greased casserole dish. Sprinkle on grated Cheddar cheese and then sprinkle on bread crumbs. Dot with butter and bake uncovered for approximately 30 minutes.
