CHRISTMAS DANISH CAKE 
1 c. butter
1 3/4 c. sugar
3 eggs
3 c. cake flour, sifted
1 1/2 tsp. baking soda
1 tsp. salt
1 c. buttermilk
1 tbsp. orange juice
1 lg. jar maraschino cherries
1 tbsp. grated orange peel rind
1 tsp. vanilla
2 boxes date pieces
2 c. nuts

Omit salt and soda if using self-rising flour.

Chop nuts, dice cherries and dates, put in bowl. Flour with 1 cup sifted flour. Cream sugar and butter. Add whole eggs, one at a time. Add orange juice. Combine buttermilk and vanilla and add alternately with remaining sifted flour, salt and soda. Fold in fruit and nuts. Pour in oil and floured pan. Bake at 350 degrees 1 hour, 20 minutes.
