LAURA'S MONTE CARLO CHICKEN
SALAD
 
4 chicken breasts (boneless, skinless)
1 pint dairy sour cream
1 env. HIDDEN VALLEY® ranch dry seasoning mix
5 celery stalks, sliced
1 bunch green onions, finely chopped
1/2 cup slivered almonds (2 small pkgs.), lightly toasted, or plain
bread of choice

Add envelope of Ranch dressing mix to dairy sour cream. Stir and refrigerate.

Spray a baking sheet with non-stick cooking spray (Pam) and spread out almonds and then place under broiler and watch carefully as these will toast quickly. In a hurry don't toast the almonds.

Cook chicken breasts to your liking. I marinate mine in Italian dressing and grill on BBQ. Pick up a whole roasted chicken from the deli. Use leftovers!

Chop your celery and onions while chicken is cooking.

Assemble all of ingredients together and you have the best chicken salad on earth! Eat it plain or as a sandwich. Tastes extra good on croissants!
