3 med. cucumbers, thinly sliced
1 sm. red onion, thinly sliced
2 tbsp. Dijon mustard
2 cloves garlic, minced
4 tbsp. wine vinegar
1/2 tsp. oregano
1/2 tsp. cumin
1/2 c. olive oil
Salt and pepper to taste

Toss together cucumbers and onion in a medium sized bowl. Whisk together mustard, garlic, vinegar, oregano and cumin. Slowly add oil and blend well. Stir in salt and pepper. Toss cucumbers and onions with dressing and chill. Serves 6.
