MARINATED CUCUMBER SALAD 
2 cucumbers, peeled and sliced
4 green onions, chopped into 1/2 inch pieces
1/4 c. red wine vinegar
1 tbsp. soy sauce
1 tbsp. vegetable oil
Freshly ground pepper

Combine all ingredients in medium bowl. Cover and refrigerate several hours or overnight. Serve salad chilled.
