CUCUMBER-CORN SALAD 
12 oz. canned white shoepeg corn
1 chopped green pepper (or red)
About 1/2 c. celery, chopped
1/4 sliced cucumber
1 sm. red onion, diced
1/2 c. carrots, diced
15 cherry tomatoes, quartered
1/3 c. vegetable oil
3 tbsp. sugar
1/2 tsp. salt
3 tbsp. red wine vinegar (up to 6 tbsp. red wine vinegar to taste)

Cut up and mix vegetables. Mix dressing. Mix all together.
