SOUR CREAM APPLESAUCE BRAN
MUFFINS
 
1 1/4 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup sugar
1 cup bran flakes
1 egg, beaten
1/2 cup dairy sour cream
1/4 cup (1/2 stick) butter, melted
1 cup applesauce

Sift dry ingredients into bowl, except the bran flakes. Combine bran, egg, sour cream, butter and applesauce. Let stand for 2 minutes. Stir into dry ingredients - just. Spoon into greased muffin tins (12). Add nut crunch topping. Bake at 400°F for 15 to 20 minutes.

NUT CRUNCH TOPPING:

1/3 cup brown sugar
1/3 cup chopped nuts
1/2 tsp. cinnamon

Mix with fork.
