NEBRASKA SOUR CREAM - RAISIN MUFFINS | |
1 3/4 c. all-purpose flour 3 tbsp. sugar 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 lg. egg 1 c. sour cream 1/3 c. milk 1 c. raisins Heat oven to 400 degrees. Grease twelve 2-2 1/2 inch muffin pan cups. Sift flour, sugar, baking powder, baking soda and salt into large bowl. Using wooden spoon or electric mixer, beat egg, sour cream and milk in a second bowl to blend well. Stir this sour cream mixture into flour mixture only until just blended. (Batter will be stiff.) Fold in raisins as you stir. Spoon batter into prepared muffin pan cups. Fill each nearly to top. Bake 20-22 minutes until golden brown and sharp knife inserted in muffin comes out clean. Makes 12 muffins. |
