WHOLESOME PUMPKIN BREAD 
1 c. pumpkin
1 c. honey
1/2 c. cooking oil
2 eggs
1 3/4 c. whole wheat flour
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. pumpkin spice or 1/2 tsp. each clove, cinnamon, nutmeg, and allspice

Add the honey to oil; then add eggs and pumpkin and mix well. Add flour and spices, baking powder, soda, and salt. (Optional - 1/2 cup nuts or raisins.) Grease and flour pan(s). Bake 1 hour at 350 degrees. Makes 1 large loaf or 2 small loaves.
