GREAT PUMPKIN COOKIES 
1 c. flour
1/2 c. quick oats
1/2 c. shredded coconut
2 tbsp. wheat germ
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1/2 c. soft butter
1/2 c. brown sugar
1/2 c. sugar
1 egg
1/2 tsp. vanilla
3/4 c. pumpkin
1/2 c. raisins (optional)
1/2 c. chopped nuts (optional)

Combine flour, oats, coconut, wheat germ, baking soda, cinnamon, and salt; set aside.

Cream butter and sugars in large bowl. Add egg and vanilla. Beat until fluffy. Add dry ingredients alternately with pumpkin, beating well. Stir in raisins and nuts. Drop by tablespoon on greased cookie sheet. Spread or flatten to 3/8 inch thick. Bake at 350 degrees for 15-20 minutes or until light brown. Makes 2 dozen.
