HOLIDAY FRUIT CAKE 
2 eggs
1/2 c. water
2 boxes Pillsbury Quick Date bread
2 2/3 c. reconstituted mincemeat
1 c. chopped nuts
2 c. candied cherries and pineapples (mixed)

Generously grease 2 loaf pans. In a large bowl, combine eggs and water. Add remaining ingredients by hand. Stir until combined. Pour into pans.

Bake at 350 degrees for 80 to 90 minutes or until toothpick comes out clean. Cool 15 minutes. Invert on rack and cool completely. Store in refrigerator. (Sometimes after I grease loaf pans, I line them with wax paper for easier removal.)
