CUCUMBER AND MINT SANDWICHES 
1 seedless cucumber
32 sm. fresh mint leaves
1 stick unsalted butter, softened
1 tsp. grated orange zest
8 thin slices firm white bread, crusts removed
8 thin slices firm whole wheat bread, crusts removed
Fresh mint sprigs
Thin orange slices

Peel the cucumber, halve lengthwise and slice crosswise as thinly as possible.

In a small bowl, combine mint leaves, butter and orange zest and stir until creamy and blended.

Spread each slice of white bread with about 1 1/2 teaspoons of the butter mixture. Arrange several slices of cucumber on each slice and top with the whole wheat bread. Cut each sandwich into quarters to make 4 squares or triangles.

To serve, arrange sandwiches on a platter, alternating white and whole wheat sides of sandwiches, and garnish with mint sprigs and orange slices. Makes 32 tea sandwiches.
