SARAH'S HOMEMADE VEGETABLE SOUP 
1 tbsp. olive oil
1 lb. ground Angus beef
1 small onion, chopped
1 stalk celery,diced
1 small green pepper, diced
2 cloves garlic crushed
1 large can V-8 juice
1 (15 oz.) can diced tomatoes, with juice
1 tsp. salt
1/2 tsp. black pepper
1 bay leaf
1 bag frozen vegetable soup vegetables

In a Dutch oven over medium heat, brown beef, onion,celery, green pepper, and garlic. Drain grease and return to stovetop.

Add the V-8 juice, diced tomatoes, salt & pepper, bay leaf, and frozen vegetables.

Simmer over medium heat until vegetables are tender.

Before serving, remove bay leaf

*I make my soup a day ahead to let the seasonings filter through.

*For a little heat, add in a can of green chilies or a chopped jalapeno.
