GREEK SALAD 
1 tbsp. olive oil
2 tbsp. cider vinegar
1/4 tsp. sugar
1/4 tsp. dry mustard
1/4 tsp. dry mint, crushed

SALAD:

1 1/2 c. torn spinach
1 sm. onion, sliced and separated into rings
4 cherry tomatoes, halved
2 tbsp. crumbled feta cheese
1 tbsp. capers, drained; optional

Prepare salad dressing, combine, cover and shake well to mix. Chill thoroughly. In salad bowl combine salad ingredients. Shake dressing well; pour over salad. Toss lightly to coat. Sprinkle capers atop. 2 servings.
