OATMEAL CAKE 
1 c. oatmeal (not instant)
1 1/2 c. hot water
2 eggs
1 c. granulated sugar
1/2 c. cooking oil
1 c. brown sugar
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt

Pour hot water over oatmeal, let stand while you cream eggs, sugar, cooking oil and brown sugar. Sift together flour, baking soda, cinnamon and salt. Mix all ingredients and pour in 9 x 13 x 2-inch loaf pan.

Bake in oven at 325°F for 50 to 60 minutes until done.

Topping:

1 stick butter
1 c. brown sugar
4 tbsp. Eagle Brand milk
1 c. chopped pecans
1 c. coconut

Place butter, sugar and Eagle Brand milk in double boiler and boil for 1 minute. Add pecans and coconut; spread over warm cake and brown in oven or broiler.
