FIESTA BRUNCH EGGS 
8 slices bread
1/2 c. butter, softened
3 c. grated Cheddar cheese
1 (4 oz.) can green chilies
8 slices Canadian bacon, shredded
6 eggs
2 1/2 c. milk
1/2 c. half & half
1/2 tsp. salt
Cayenne, dry mustard & onion powder to taste

Butter bread on both sides. Cut into cubes. Butter casserole. Put bread cubes on the bottom, sprinkle with cheese, bacon and chilies. Beat eggs with milk, half & half and spices. Pour over mixture and refrigerate overnight. Bake 45 minutes uncovered at 325 degrees. Serve with fruit, juice and coffee cakes. Serves 6-9.
