STEAMED BLACKBERRY PUDDING 
1 tbsp. butter
1/2 c. sugar
1 egg
1 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/4 c. milk
3/4 c. blackberries
Sugar, for berries

Grease 4 large or 6 small individual molds. Cream butter and sugar. Add well-beaten egg and mix well. Sift flour, then measure. Together, sift flour, baking powder, and salt. Add alternately with milk to butter mixture. Place 2 tablespoons berries and 1 tablespoon sugar in each greased mold. Place batter on top of berries (little less than 2/3 full). Steam until done. Serve warm with cream or berry sauce.

SAUCE:

1 c. sugar
4 tbsp. flour
1 1/2 c. boiling water
1/8 tsp. salt
1/2 c. crushed blackberries
3 tsp. lemon juice
4 tbsp. butter

Mix sugar and flour. Add boiling water and salt. Boil until thick and clear. Add berries and cook about 20 minutes over hot water. Beat in lemon juice and butter. Serve warm over puddings.
