THE ORIGINAL DUTTON FAMILY BAKED
BEANS
 
1 lb. great northern beans
1/2 lb. salt pork (more or less)
1 large onion, chopped coarsely
2 hot peppers, chopped coarsely
salt and pepper, to taste
4 tbsp. sugar

Carefully look over beans - rinse off well in colander. Soak overnight in cold water.

Remove rind from salt pork and cut into 1/2-inch squares (the thickness of the pork).

Mince onions and pepper. Rinse beans. Cover well with water. Salt and pepper well. Add sugar, then balance of ingredients and stir well. Cover and boil until the beans are tender (about 2 1/2 hours on low heat.)

Place in 2 1/2 quart casserole dish prepared with non-stick cooking spray (Pam). Bake uncovered at 350°F for 1 1/2 hours.

BOSTON BAKED TYPE:

As above except before putting beans in casserole, put 1 heaping tablespoon of brown sugar and 1/4 cup molasses in casserole, then add beans, mix thoroughly, and bake as usual.

NOTES:

If you have a sweet tooth (like I do) you may want to add more sugars and molasses to the recipe.

For a smokey like flavor add a few pieces of bacon to the mix.
