SQUASH CASSEROLE 
2 c. cooked squash
3/4 stick butter
2 eggs
1 tsp. salt
1/2 tsp. pepper
1/2 c. onion (chopped fine & sauteed)
1 c. grated cheese
1/2 c. evaporated milk
1 c. cracker crumbs

Mash cooked squash. Add other ingredients. Pour into greased casserole. Top with cracker crumbs. Bake in 375 degree oven for about 40 minutes.

Serves 6.
