RHUBARB CRISP 
2 c. diced rhubarb
1 c. all-purpose flour
1 c. sugar
1 tsp. ground cinnamon (optional)
1/3 c. butter

Place diced rhubarb in a greased shallow pan. Mix flour, sugar, and cinnamon. Cut butter into mixture. Sprinkle mixture on rhubarb. Bake in moderate 350 degree oven for 25 minutes. Serve warm. Yield: 6 servings.
