SWEET AND SOUR PORK CHOPS 
1 can (20 oz.) pineapple chunks (drained and reserve juice)
1 1/4 c. catsup
1 tbsp. brown sugar
1 tbsp. vinegar
4 med. size carrots (sliced)
1/2 green pepper (cut in chunks)
4 (1 inch) thick loin pork chops
2 tbsp. vegetable oil

Serve with rice.

Combine pineapple juice, catsup, brown sugar and vinegar. Cook 5 minutes until hot and flavors are blended. Add carrots, pineapple and green pepper.

Brown pork chops in oil. Arrange in shallow baking dish. Spread pineapple- vegetable mixture over top.

Cover and bake in 350 degree oven for 1 hour or until pork chops are done. Makes 4 servings.
