RICOTTA PIE 
3 c. ricotta cheese
1/4 c. flour
1 (9 inch) pie shell
1/2 tsp. salt
Cinnamon
1 tbsp. grated lemon peel
1 tbsp. grated orange peel
1 tbsp. white raisins
1 tbsp. vanilla
4 eggs, beaten
3/4 c. sugar

Preheat oven to 350 degrees. Combine the cheese, flour, salt, orange and lemon peels, raisins, and vanilla in a large bowl. Beat in the eggs. Add the sugar gradually and mix well. Pour into the pie shell and bake until the filling is firm, 90 minutes or more. Serve warm or chilled, sprinkled lightly with cinnamon
