GRANDMA'S HOLIDAY RICOTTA PIE 
18 lg. eggs
2 1/2 c. sugar
3 lbs. Ricotta cheese
2 tsp. vanilla

CRUST:

2 lg. eggs
2 1/2 c. flour
1/4 c. Wesson oil
4-5 tbsp. cold water
Salt

Preheat oven to 350 degrees.

Filling: Beat eggs and sugar. Slowly add Ricotta, then vanilla.

Crust: Beat eggs with Wesson oil. Slowly add water (2 tablespoons at a time). Add flour and a pinch of salt.

Grease large, square tin pan. Put in crust. Add filling. Cook for 2 hours at 350 degrees.

Important: Cool 1 hour. Feeds an army.
