RICOTTA PIE 
3 lb. ricotta
6 eggs
3/4 to 1 c. sugar
1 tbsp. (or more to taste) cinnamon
1 tbsp. (or more to taste) lemon extract
2 deep dish pie crusts

Preheat oven to 350 degrees. Mix all ingredients. Pour into pie crusts and bake 45 minutes to 1 hour.
