RICOTTA RICE PIE 
3 lbs. Ricotta
1 1/2 qts. milk
3/4 c. rice (raw)
1 1/2 c. sugar
10 eggs
1/2 c. orange juice
1 tbsp. grated orange peel
1 tsp. vanilla
1/2 c. mix fruit (candied peels)
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/4 tsp. salt

Cook rice in milk; boil 15 minutes. Let cool.

Mix eggs, sugar and Ricotta. Add vanilla, nutmeg, cinnamon, salt, orange juice and peel. Add mixed fruit. (Add 1/2 cup of anisette or whiskey if you like.) Mix well. Pour into pie shells. Bake 1 hour at 325 degrees.

I sprinkle some chocolate chips in pie and then when pie is lightly brown and firm, I sprinkle some chips on top.
