RICOTTA CHEESE RICE 
1/2 c. butter
8 oz. Ricotta cheese
1 1/2 c. sugar
1 lb. rice, cooked
1/2 c. nuts, chopped
1/2 c. raisins

Preheat oven to 250 degrees. Place 1 tablespoon butter in pan with Ricotta cheese and make golden brown, then add sugar and cook 2 minutes.

Pour half of the rice into greased baking dish, put some Ricotta on top and sprinkle 1/3 of the nuts and raisins on top of that. Repeat and finish with nuts and remaining butter. Bake 15-20 minutes and serve hot or cold.

It was delicious, though I am not sure the layering is necessary. Just stir it all together and it works fine as well. Also, it's very very very sweet, more of a dessert dish. Salt can be added to it as well as cooked sausage making a good savory dish. Cayenne pepper is excellent on it too.
