MIXED VEGETABLE CASSEROLE 
1 (16 oz.) pkg. frozen mixed vegetables, cooked according to directions and drained
1 c. finely chopped celery
1 c. finely chopped onion
1 c. grated Cheddar cheese
1 c. mayonnaise
1 pkg. Ritz crackers
1 stick melted butter

Be sure to cook frozen vegetables and drain. Mix vegetables, celery, onions, cheese and mayonnaise in casserole dish. Crush Ritz crackers and sprinkle on top. Drizzle melted butter on top of crackers. Bake at 350 degrees for 20 minutes.

VARIATIONS: Use any vegetable combination you like.
