LIME CUCUMBER MOLD 
2 (4 serving size) pkgs. lime flavor gelatin
1 3/4 c. boiling water
1 1/2 c. cold water
1/4 c. cider vinegar
1 tbsp. sugar
3 c. diced cucumber
1/4 c. chopped parsley
Tomato slices
Radish sprouts

Dissolve gelatin in boiling water in large bowl. Stir in cold water, vinegar and sugar. Refrigerate until mixture is as thick as unbeaten egg white. Fold in diced cucumber and parsley; pour mixture into 6-cup ring mold.

Refrigerate until set, about 4 hours. To serve, unmold onto cold serving plate; fill center with tomatoes and radish sprouts. Makes 8-10 servings.
