CUCUMBER MOLD 
Lime Jello
1 c. boiling water and 1/4 c. cold water
8 oz. cream cheese, softened
1/2 tsp. salt
2 c. chopped cucumbers
1 c. mayonnaise
1/4 c. parsley
1/4 c. chopped onion

Make Jello as directed, but reduce cold water to 1/4 cup. Mix remaining ingredients well and add to Jello, when it is slightly thickened place in mold and chill. Parsley may be either fresh or dried. This cucumber mold is very refreshing with a full meal.
