PUMPKIN MAPLE PIE 
1 1/2 c. pumpkin puree or canned pumpkin
2 eggs, lightly beaten
1/2 c. maple syrup
1 1/4 c. milk
2 tbsp. flour
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
1/4 tsp. salt
Pastry for 10-inch pie, well chilled

Preheat oven to 400 degrees. Mix pumpkin, eggs, syrup and milk until very smooth; stir in flour and seasonings; mix well. Pour into pie shell and bake for about 45 minutes or until filling is firm and a knife comes out clean. Let cool. Makes 8 servings.
