PUMPKIN APPLE STREUSEL MUFFINS 
2 1/2 c. flour
1 tbsp. pumpkin pie spice
1 tsp. baking soda
2 eggs
1/2 c. oil
2 c. sugar
1/2 tsp. salt
1 c. pumpkin
2 c. peeled and chopped apples

TOPPING:

2 tbsp. flour
1/2 tsp. cinnamon
1/4 c. sugar
4 tsp. butter

Combine flour, sugar, pumpkin pie spice, soda and salt and set aside. Combine eggs, pumpkin, and oil. Add liquids to dry ingredients, stir until moistened. Stir in apples. Fill muffin cups 3/4 full. Cut topping ingredients together with a fork. Sprinkle over the tops of the muffins. Bake at 350 degrees for 35 to 40 minutes.
