PUMPKIN APPLE STRUESEL MUFFINS 
2 1/2 c. flour
2 c. sugar
1 tbsp. pumpkin spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs, beaten
1 c. pumpkin
1/2 c. vegetable oil
2 c. peeled, chopped apples

STREUSEL TOPPING:

2 tbsp. flour
1/4 c. sugar
1/2 tsp. cinnamon
4 tsp. butter

In large bowl, combine flour, pumpkin pie spice, sugar, baking soda and salt. Set aside.

In medium bowl combine eggs, pumpkin, and oil. Add liquid ingredients to dry ingredients. Stir until just moist. Stir in apples.

Spoon into muffin pan. Sprinkle Streusel Topping on. Bake in preheated oven, 350 degrees, 35 to 40 minutes.
