APPLE MUFFINS 
3 c. flour, sifted
2 1/2 tsp. baking powder
1 tsp. nutmeg
1 c. sugar
2/3 c. shortening
2 eggs
1 c. milk
1 tsp. cinnamon
2 c. finely chopped apples

Bake at 350 degrees for about 25 minutes.

Cream shortening and sugar. Add eggs and beat well. Sift together flour, baking powder, nutmeg, cinnamon. Add dry ingredients to milk. Stir in apples. Fill greased muffin pan about 3/4 full.

STREUSEL FOR TOP OF MUFFINS:

1 c. brown sugar
1 tsp. cinnamon
1 c. ground nuts

Mix and sprinkle over muffins then bake.

This recipe is very good! If you do not have shortening like I did substitute the amount for stick margarine. It tastes the same and is not as fattening. Also for a little extra flavor dip muffin top in brown sugar.
