RED VELVET CAKE 
1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 oz. red cake coloring
2 tbsp. cocoa
2 1/2 c. flour
1 tsp. salt
1 c. buttermilk
1 tsp. vanilla
1 tbsp. vinegar
1 tsp. baking soda

Cream shortening, sugar and eggs. Make a paste of cake coloring and cocoa; add to sugar mixture. Sift flour and salt together; add to sugar mixture, alternately with buttermilk and vanilla. Stir in vinegar and soda by hand - do not beat.

Bake in 2 greased, floured layer pans at 350 degrees for 20-30 minutes (or sheet cake pan). Cool, ice with Fluffy Frosting.

FLUFFY FROSTING:

7 tbsp. flour
1 c. milk
Pinch salt
1 c. butter
1 c. granulated sugar
1 tsp. vanilla

Make paste of flour, milk and salt. Cook, stirring constantly until thick. Cool. Cream butter and sugar thoroughly. Add paste slowly, beating until fluffy (like whipped cream). Stir in vanilla and spread on cake.
