BAKED FISH FILLETS 
2 lbs. fillets (flounder, sole, whiting, any white meat fish)
1/3 c. mushroom, sliced
1 tsp. salt
1/2 tsp. pepper
1 tsp. marjoram
2 tbsp. dry white wine
2 tsp. lemon juice
1/4 c. Monterey Jack cheese, grated
1/4 c. bread crumbs
1/2 c. melted butter
1/3 c. scallions

Grease a baking dish with butter, large enough to hold the fillets in one overlapping layer. Sprinkle the scallions and mushrooms over the bottom of the dish. Arrange the fish fillets over the vegetables covering the thin part of each fillet with the thick part of another (to prevent overcooking). Season the fish, sprinkle wine and lemon juice over all. Top with cheese and bread crumbs and pour butter over all. Bake at 400 degrees for 15 minutes.
