RICOTTA PIE 
1 pt. sm. ricotta cheese
1 c. sugar
1 tsp. vanilla
4 eggs, beaten
Crust for 9" (2 crust) pie

Mix all ingredients listed in large mixing bowl. Mix well with fork. Pour into pie shell. Cover top of pie with strips of dough, about 5 strips cross and 1/2" wide. Leave about 1/2" between pieces. Then do the same going in other way. Bake at 350 degrees for 3/4 to 1 hour until firm in the middle.
