RICOTTA CREAM PIE 
1 pkg. pie crust mix
1 egg, beaten
1 tbsp. sugar
1 lb. Ricotta
4 eggs
3/4 c. sugar
2 tbsp. flour
1 tsp. lemon extract
1 tsp. vanilla extract
1 (8 oz.) can Pet milk

For crust, mix first 3 ingredients well; add a bit of water if needed. Roll. Fit into a 10-inch pie plate.
