RICOTTA CHEESE PIE 
1-1 1/2 lb. Ricotta cheese
1 jumbo or 2 med. eggs
1/2 c. sugar per lb. of cheese
Grated orange
Squeeze juice from orange
1 pie shell (deep) (can have lattice top)

Combine filling ingredients, blend lightly. Put filling into pie shell. Preheat oven to 350 degrees. Bake with edge of crust covered with foil for 15 minutes. Remove foil. Bake 20 more minutes.
