RICOTTA CHEESE PIES 
3 lb. Ricotta cheese
1 c. sugar
12 eggs (extra large)
1 tsp. vanilla
1 c. milk
12 oz. chocolate chips

Add eggs and sugar to cheese. Beat well. Add milk and vanilla to cheese mixture, beat well. Set aside.

CRUST:

3 c. flour
3/4 c. butter
1/4 tsp. salt
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. lemon rind

Blend well above ingredients. Then add:

1/4 cup milk
2 eggs
1 tsp. vanilla

Roll out dough for three 9 inch pie plates. Add cheese mixture to pies and sprinkle with chocolate chips. (4 oz. chips each pie). Bake 350 degrees about 35 to 45 minutes or until pies are set. Keep refrigerated.
