MEGA-BEAN SOUP 
Pinto beans
Barley
Pink beans
Rice
White beans
Black-eyed peas
Kidney beans
Soy beans
Split peas (yellow and green)
Lentils

(Black beans will turn soup grey!)

4 c. of mixture
2-3 c. sliced celery
4 qts. water
6-8 potatoes, cubed
2 lg. onions, coarsely chopped
2-3 lbs. cubed ham OR ham bone with plenty of meat
2 lg. garlic cloves
1 rounded tbsp. leaf oregano
1/2 c. parsley
1 tsp. pepper

Sort and wash mix and place in large pot. Cover with water. Soak overnight. Drain water, add 4 quarts fresh water, ham, onions, garlic, salt, pepper, oregano, celery. Cover and bring to boil. Reduce heat and simmer about 2 hours or until beans are tender. Add potatoes and simmer until done. Remove from heat. Add parsley. Stir and allow to stand for 10 minutes.
