NORWEGIAN RICE PUDDING 
3 c. milk
1/2 c. cooking rice
4 tsp. salt
4 eggs
2 c. sugar
1 tsp. vanilla
Pinch nutmeg
Optional: Seedless raisins

Scald the milk. Add the cooked rice and salt. Lightly beat the eggs and add to the milk mixture. Add the sugar, vanilla, nutmeg and if desired, the raisins. Bake at 350 degrees for 1 hour.
