EASY HEALTHY BANANA BREAD 
1/3 c. oil
2 c. apple juice concentrate, thawed
2 c. mashed bananas, frozen, then thawed works best
1 carton Eggbeaters or 4 eggs
3 c. Krusteaz whole wheat and honey pancake mix
1 c. milk
1/2 c. chopped nuts (optional)
Butter flavored Pam

Mix together oil, applesauce, bananas and Eggbeaters. Add pancake mix and milk. Stir in nuts. Spray 4 loaf pans with Pam. Pour batter into pans and bake for about 1 hour at 350 degrees. (Check after 50 minutes.) Bread is done when toothpick comes out clean. Cool on rack.

Added chocolate chips. Used a muffin pan. Cooked for 30 minutes. My kids loved them!
