APPLE SNOW 
Whites of 3 eggs
3/4 cup apple puree
Powdered sugar

Pare, quarter, and core four green apples, steam until soft, and puree in a blender, food processor or food mill.

There should be 3/4 cup apple pulp. In a bowl, beat the egg whites until stiff using a wire whisk. Add gradually the apple puree, sweetened to taste, and continue beating. Pile up in a decorative glass dish, chill, and serve with Boiled Custard.
